Researchers at Virginia Polytechnic and State University, Blacksburg, VA 24601-0606 and at Hebrew U., Rehovot, Isreal, found that by testing varying amounts of protein in the diets of horses, while some protein is required, most are fed at too high a level.
"Heat production from higher levels of protein may interfere with exercise.... 'by increasing acidity as protein is acidic,] and increasing acidity will interfere with 'glucose breakdown] and muscle fiber contraction," they note.
"Restriction of dietary protein may be beneficial during strenuous exercise
by diminishing production of heat and acid, " they added.
