Almost Instant Miso Soup
Miso is made from fermented soy beans and barley or rice.
1/4 cup of scallions
1/3 cup miso
1/2 pound of tofu, cut into 1/2 inch cubes
1/4 cup of peeled and minced carrots.
- Bring 6 cups of water to a boil in a medium sized pot. Turn down
heat to low, and mix 1/2 cup water with miso in a blender or bowl. Whisk
or blend until smooth.
- Pour miso mixture into hot water and add tofu and carrots. Stir once
or twice and let sit for a minute. Be sure the water is still hot. Add
scallions and serve Scallions are spicy, though not as much as their
